Bibimbap is a Korean dish that typically consists of a bowl of rice topped with various sautéed and seasoned vegetables, sliced meat (often beef), an egg, and gochujang, a sweet and spicy chili paste. This is by no means the traditional method of making it, but it’s fast and makes for an easy weeknight meal. In this microwaved adaptation, beef and mushrooms are cooked in a savory and slightly spicy sauce that’s perfect for serving over fluffy steamed rice. Add steamed spinach or vegetables, an egg, kimchi, or pickled veggies to make it a meal.

Ingredients
- 2 tablespoons gochujang
- 1 teaspoon sugar
- 2 teaspoons sesame oil
- ¼ teaspoon kosher salt
- 1 clove garlic, finely chopped
- ½ cup (45g) sliced mushrooms, cremini or button
- 4 oz (115g) thinly sliced tender beef, like sirloin, tenderloin, or ribeye
- Steamed rice
- ⅛ teaspoon sesame seeds
- 1-2 poached eggs, optional
- Steamed spinach, optional
- Anyday pickles, chopped kimchi, shredded carrots, bean sprouts, sliced scallions, and sliced radishes for topping
Preparation
- Place the gochujang, sugar, sesame oil, garlic, mushrooms, and beef, into the Anyday dish and stir to combine.
- Cover with the lid (knob lifted) and cook for 3-4 minutes or until the meat is fully cooked and the sauce has reduced slightly.
- Spoon the saucy beef and mushroom mixture over rice. Top with sesame seeds, poached eggs, spinach, kimchi, and pickled and raw veggies. Enjoy hot.
Serving suggestions & tips
- Replace the beef with chicken or pork for a non-traditional alternative.
- Sub in bok choy or broccoli for the spinach if you’d like.
- For a vegetarian option, substitute tofu for the beef.
Recipe notes
- For extra flavor, marinate the beef and mushrooms in the gochujang, sugar, garlic, and sesame oil overnight in the Anyday dish with the knob pushed down.
- With a large group, this dish is best enjoyed family style! Put toppings in small bowls and let everyone build their own.
- Microwave ovens vary, even with the same wattages. Adjust cooking times as needed.
