To find your microwave’s wattage, look at the front panel, the side of the door, in the back, in the user manual, or Google the model number. If both an input and output wattage are listed, use the output.

Wattage translates to how powerful the microwave is. The higher the wattage, the faster your food will cook. The lower the wattage, the longer the cook time.

When in doubt, start with less time — you can always add more.

Dish

The Medium Deep Dish

Ingredients

  • 2 oz (55g) ground beef
  • 2 tablespoons butter
  • tablespoons all-purpose flour
  • 1 cup (240ml) milk
  • 1 teaspoon taco seasoning
  • Salt, to taste
  • 1 cup (75g) shredded cheddar cheese

Preparation

  1. Place the beef and butter in the Anyday dish. Cover with the lid (knob lifted). Cook in the microwave for 1-2 minutes, or until fully cooked.
  2. Add the flour and whisk well, until the flour is fully dissolved. Add the milk, taco seasoning, and salt. Mix well. Cover and cook for 2-3 minutes, or until thickened to your liking.
  3. Add the cheese and mix until incorporated.

Suggestions

  • Turn up the heat: Add a few dashes of your favorite hot sauce when mixing in the cooked beef for a spicier queso.
  • Add a smoky twist: Stir in adobo sauce from a can of chipotle peppers to infuse the queso with a rich, smoky flavor.
  • Make it lighter: Swap out ground beef for ground turkey for a leaner yet flavorful alternative.
  • Go vegetarian: Replace the cooked beef with cooked lentils for a hearty, plant-based option that still provides texture and flavor.
  • Mix beef and chorizo: Brown a combination of ground beef and Mexican chorizo before stirring it into the queso for a bold, savory, and slightly spicy twist.
  • Boost the seasoning: Enhance the flavor by increasing the taco seasoning, adding a splash of Worcestershire sauce, and finishing with a fresh squeeze of lime for extra depth and brightness.

Recipe Notes

  • Make ahead! This queso can be prepared up to 3 days in advance and reheated as needed.
  • For a smoother, creamier texture, mix sharp cheddar with Monterey Jack or Oaxaca cheese—both melt beautifully and help prevent graininess.
  • Microwave ovens vary, even with the same wattage. Adjust cooking times as needed.
