Wattage translates to how powerful the microwave is. The higher the wattage, the faster your food will cook. The lower the wattage, the longer the cook time.

When in doubt, start with less time — you can always add more.

Organic Tahini Trio

Ingredients

  • 2 (200g) small eggplants, peeled and diced
  • 1 tablespoon tahini
  • 2 cloves garlic, peeled
  • 3 tablespoons olive oil 
  • salt, to taste 
  • black pepper, to taste
  • 2 tablespoons lemon juice 
  • paprika, to taste

Preparation

  1. Mix the eggplant, tahini, garlic, olive oil, salt, and pepper in the Anyday dish until combined. Cover with the lid (knob lifted).
  2. Cook in the microwave for 7-8 minutes, or until the eggplant is tender and soft when pierced with a fork. Cool for 5 minutes with the lid off before transferring to a blender.
  3. Add lemon juice and blend until smooth. Serve with a drizzle of olive oil and a sprinkle of paprika.

Suggestions

  • If you can’t find tahini, use toasted sesame seeds instead. 
  • Aside from serving this as a dip, try it in your favorite sandwiches to add a punch of flavor.
  • Tray it with chopped canned roasted better peppers.
