- 2 garlic cloves, minced
- 3 tablespoons vegetable oil
- 1-2 Japanese eggplants, cut into into 4” lengths
- 1 (1.8 ounce) Omsom Chinese Mala Salad Starter
- Sesame seeds, for serving (optional)
- 1 scallion, thinly sliced (optional)
Preparation
- Add the garlic, oil, and eggplant in the Anyday and mix well. Cover with lid (knob lifted) and cook in the microwave 3-4 minutes, or until the eggplant is tender.
- Add the Omsom Chinese Mala Salad Starter, mix well, and continue cooking for 1-2 minutes.
- Garnish with sesame seeds and thinly sliced scallions on top, if desired.
Suggestions
- If eggplant is not available, you may substitute it with zucchini.
- Add shredded chicken or tofu for a complete meal.
