Equally delicious served chunky or smooth, this vegetable and chicken soup can be adapted for all ages. Puree it for infants just starting solids, or serve it as a creamy stew for toddlers. Either way, they’re sure to ask for seconds.
All of Anyday’s recipes are tested (and retested!) in many different microwave and home kitchens to make sure they work—, and work well. Unless specified otherwise, all recipes should be cooked at full power.
What You’ll Need
What You’ll Need
The Medium Deep Dish
The best dish for 1-2 portions of grains, veggies, mac and cheese, ramen, and more.
The Anyhand Mitts
Handle hot Anyday dishes with care with these microwave mitts that double as trivets!
Ingredients
- ½ (100g) boneless and skinless chicken breast, diced small
- ¼ cup (45g) celery, diced small
- ¼ cup (30g) potatoes, peeled and diced small
- ½ cup (120ml) chicken stock, vegetable stock, or water
- salt, to taste
Preparation
- Add the diced chicken, celery, potatoes, half the amount of liquid, and salt into the Anyday dish. Cover with the lid (knob lifted).
- Cook in the microwave for 6 minutes, or until the chicken is cooked through and the vegetables are very tender when pierced with a fork.
- Add the remaining liquid. Using an immersion blender or blender, puree until the mixture is as smooth or chunky as you like. Season to taste.
Serving suggestions & tips
- Feed just as a puree on its own, or mix it with some cooked rice or other grains if you’re starting on chunky foods.
- Add extra stock or water to turn this into a creamy soup.
Recipe notes
- Freeze the porridge in the Anytime Freezer Trays and freeze for up to 1 month. Reheat as needed.
- Microwave ovens vary, even with the same wattages. Adjust cooking times as needed.
