  • ¼ cup (30g) yellow onion, finely chopped
  • teaspoon chili flakes (optional)
  • ¼ cup (50g) sun-dried tomatoes
  • ½ cup (120ml) heavy cream
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper, ground
  • cups fresh spinach
  • 2 tablespoons grated parmesan cheese (plus more for topping)
  • 1 6-8 oz (170-215g each) boneless, skinless chicken breast
  • Fresh basil or Italian parsley, if desired

Preparation

  1. Add the melted butter, garlic, onion, chili flakes, sun-dried tomatoes, cream, salt, and pepper, tossing to coat.
  2. Cook uncovered in the microwave for 3-4 minutes, or until the sauce has thickened and the onions have softened. Stir in the spinach and cheese.
  3. Season the chicken with salt and pepper on both sides. Nestle the chicken breasts into the sauce.
  4. Cover with the lid (knob lifted) and continue cooking in the microwave at Power Level 6tooltip for 9-11 minutes stirring halfway, until the chicken is fully cooked.
