- 1 6-8 oz (170-215g each) boneless, skinless chicken breast
- Fresh basil or Italian parsley, if desired
Preparation
- Add the melted butter, garlic, onion, chili flakes, sun-dried tomatoes, cream, salt, and pepper, tossing to coat.
- Cook uncovered in the microwave for 3-4 minutes, or until the sauce has thickened and the onions have softened. Stir in the spinach and cheese.
- Season the chicken with salt and pepper on both sides. Nestle the chicken breasts into the sauce.
