David Chang's Fish Over Riced Cauliflower
This recipe is the antidote to the despair of going to cook dinner and realizing you forgot to defrost it. Frozen fish fillets become fork-tender in a matter of minutes. The cauliflower rice will win over even the most skeptical rice lovers, as David's son can attest! Bonus: it's an extra serving of vegetables without tasting too healthy.

Ingredients
- 1 cup (100g) riced cauliflower
- 1 4-oz piece frozen arctic char, cod, halibut, or salmon
- 2 teaspoons soy sauce
- Chopped scallions or cilantro, for garnish (optional)
Preparation
- Add riced cauliflower into the Anyday dish and spread into an even layer.
- Place the frozen fish on top of the cauliflower and drizzle with soy sauce. Cover dish with the lid (knob lifted).
- Cook in the microwave for 5-9 minutes, or until fish and cauliflower are cooked and tender. (The time your fish takes to cook will depend on its thickness. The thinnest fish fillets will be closer to 5 minutes; the thickest will be closer to 9. If you’re not sure, check your fish every 30 seconds after 5 minutes!)
- Carefully remove the skin from the fish and top with a drizzle of soy sauce, chopped cilantro, chopped scallion, or enjoy as-is!
Serving suggestions & tips
- Top with bean sprouts or watercress for crunch and freshness.
- Drizzle some chili crisp on top of cooked salmon and cauliflower for some heat.
- Garnish with toasted sesame seeds for a bit of nuttiness.
- Microwave ovens vary, even with the same wattages. Adjust cooking times as needed.
