If there’s a slight chill in the air, this comforting soup is all we crave. Chef David Chang’s secret to speeding up this classic dish? The microwave! He practically invented cooking potatoes in the microwave, eliminating the need to boil them on the stovetop. We might not ever cook potatoes any other way.

Make sure to rinse your leeks well! This allium tends to carry lots of dirt deep inside of its leaves. Soak chopped leeks in some ice water for a few minutes before cooking.

To find your microwave’s wattage, look at the front panel, the side of the door, in the back, in the user manual, or Google the model number. If both an input and output wattage are listed, use the output.

Wattage translates to how powerful the microwave is. The higher the wattage, the faster your food will cook. The lower the wattage, the longer the cook time.

When in doubt, start with less time — you can always add more.

The Medium Deep Dish

Ingredients

  • 1 medium (140g) Yukon gold potato, peeled and cut into 1” pieces
  • 1 cup (60g) thinly sliced leeks, about 1/2
  • 1 tablespoon unsalted butter
  • 1 sprig of fresh thyme
  • 1 cup (250ml) chicken stock
  • cup (75ml) heavy cream
  • ½ teaspoon kosher salt
  • teaspoon black pepper, ground
  • Olive oil, for garnish (optional)
  • Chopped fresh parsley, for garnish (optional)

Preparation

  1. Add the potato, leeks, butter, and thyme to the Anyday and stir to combine. Cover with lid (knob lifted).
  2. Cook in the microwave for 3-4 minutes, or until the vegetables are soft when pierced with a fork.
  3. Add the chicken stock, salt, pepper, and heavy cream and continue cooking in the microwave for 2-3 minutes, or until the liquid is bubbling.
  4. Discard the thyme sprig. Use an immersion blender directly in the dish, or carefully transfer the soup into a blender and process until smooth. Adjust seasoning to taste.
  5. Garnish with olive oil and chopped parsley, if desired.

Serving suggestions & tips

  • Top with crumbled potato chips for extra texture.
  • Add spinach with the cream and stock for a more nutritious dish.
  • Add some chili flakes or garnish with spicy olive oil!

Recipe notes

  • This recipe works well with yams, cauliflower, and even broccoli.
