Mushrooms in the microwave? Dave knows what’s up! Cooking them in savory soy and miso brings out the richness of fresh mushrooms. Thanks to Anyday’s steam-releasing lid, these mushrooms steam in their own juices. Leave the lid on after cooking to trap all of the flavors inside the dish.
All of Anyday’s recipes are tested (and retested!) in many different microwaves and home kitchens to make sure they work — and work well.

Ingredients
- 4 oz (115) mixed mushrooms such as oyster, maitake, crimini, etc.
- 1 tablespoon soy sauce or tamari
- 2 teaspoons sesame oil
- 1 tablespoon water, chicken or vegetable stock
- 2 teaspoons miso paste (optional)
- Thinly sliced scallion (optional
Preparation
- Trim the mushrooms into even pieces, if necessary. Settle neatly into the Anyday dish and add soy sauce or tamari, sesame oil, water, and miso (if using). Cover with the lid (knob lifted).
- Cook in the microwave for 3-4 minutes, or until the mushrooms are tender and hot. Stir gently to evenly distribute the sauce.
- Cover with the lid and allow the mushrooms to rest for 1-2 minutes. This will allow the mushrooms to soak up the flavorful liquid!
- Season to taste and top with sliced scallions, if desired.
Serving suggestions & tips
- Add a poached egg and enjoy with some toast.
- Season with Momofuku Chili Crunch or Momofuku Savory Salt for extra flavor.
- Add to cooked pasta, rice, polenta, or soups.
Recipe notes
- The mushrooms will taste delicious even when reheated. Don’t hesitate to cook ahead of time.
- When selecting the mushrooms, make sure to use similar-sized ones or cut them into even pieces. This will make sure that the mushrooms cook evenly.
- Microwave ovens vary, even with the same wattages. Adjust cooking times as needed.
