This super easy quick bread is completely customizable with your favorite toppings including roasted garlic, fresh rosemary or spicy oil.

To find your microwave’s wattage, look at the front panel, the side of the door, in the back, in the user manual, or Google the model number. If both an input and output wattage are listed, use the output.

Wattage translates to how powerful the microwave is. The higher the wattage, the faster your food will cook. The lower the wattage, the longer the cook time.

When in doubt, start with less time — you can always add more.

The Medium Shallow Dish

Ingredients

  • 1 cup (140g) all-purpose flour
  • teaspoons baking powder
  • ¼ teaspoon salt
  • 3 tablespoons olive oil, divided
  • ½ cup (125ml) water
  • ½ teaspoon paprika
  • Whole roasted garlic cloves, for topping (optional)
  • Black olives, for topping (optional)
  • Fresh rosemary, for topping (optional)

Preparation

  1. In a bowl, whisk flour, baking powder, and salt. Using a fork, stir in 1 tablespoon of olive oil and water and mix until a sticky dough is formed.
  2. Coat the Anyday dish with 2 teaspoons olive oil and transfer the dough into the dish, pressing gently into the bottom of the dish. Mix the remaining olive oil and paprika and brush on top of the dough.
  3. Add toppings by pressing olives, roasted garlic, and/or rosemary leaves into the surface of the dough.
  4. Cover with lid (knob lifted) and cook for 3 minutes or until the dough bounces back and an inserted toothpick comes out clean.
  5. Allow the focaccia to cool. Cut into wedges and serve. This bread will be kept in an airtight container for up to 2 days.

Serving suggestions & tips

  • For a Napa-inspired focaccia, top with red grapes and feta cheese before cooking.
  • For Middle Eastern-inspired focaccia, brush with paprika, za’atar and olive oil. Add fresh figs and feta, if desired.
  • For an Italian twist, brush with pesto and top with sundried tomatoes.

Recipe notes

  • The dough will be very sticky, do not add more flour since it needs the extra moisture to cook correctly.
  • Microwave ovens vary, even with the same wattages. Adjust cooking times as needed.
