This fragrant green curry sauce features the fresh flavors of Thailand with coconut milk, thai basil, and markut limes. While other recipes may require reducing the sauce on the stovetop, our version leans on some cornstarch for the right consistency in a fraction of the time.

Ingredients
- 2 teaspoons vegetable oil
- 2 tablespoons green curry paste
- 1 tablespoon shallots, finely chopped
- 1 garlic clove, finely chopped
- 1 makrut lime leaf, crushed in half
- 1 pinch teaspoon chili flakes
- 1 cup (250ml) coconut milk
- 2 teaspoons cornstarch
- 2 teaspoon fish sauce
- 2 teaspoon sugar
- 5 Thai basil leaves, thinly sliced, optional
Preparation
- Place the oil, shallots, garlic, curry paste, makrut lime leaf, and chili flakes into the Anyday dish and mix well. Cover with lid (knob lifted) and cook in the microwave for 1-2 minutes, or until the curry paste is hot and strongly aromatic.
- Add the coconut milk, cornstarch, sugar, and fish sauce and stir well. Continue cooking for 3 minutes, stirring halfway through cooking.
- Remove the lime leaf, add the basil leaves, and blend with an immersion blender (or regular blender) until the texture is as smooth or chunky as you like. Season to taste with salt and pepper.
- Allow the sauce to cool and use as desired.
Serving suggestions & tips
- Use this recipe with either yellow or red Thai curry paste instead of green.
- If you cannot find markut limes, add the juice of a fresh lime after cooking.
- Add bamboo shoots, baby corn, and spinach for a vegetarian meal.
- For a vegan sauce, swap the fish sauce for soy sauce (or tamari) or simply omit it.
Recipe notes
- Allow sauce to cool, about 10-15 minutes. Portion sauce evenly into the Anytime Freezer Trays, cover with the lid, and freeze.
- Microwave ovens vary, even with the same wattages. Adjust cooking times as needed.
