Uplevel simple carrots with the ultimate sweet-savory combination: Honey and butter. This is one of our favorite “throw-it-all-together-and-cook” side dishes, perfect for a weeknight and a dinner party alike.

Ingredients
- ½ lb (225g) carrots, peeled and cut into 1” pieces
- 1 tablespoon honey
- 1 tablespoon butter (or olive oil)
- ¼ teaspoon salt
- 1 teaspoon lemon zest
- 1 tablespoon chopped parsley
Preparation
- Place the carrot pieces, honey, butter, and salt in the Anyday dish. Cover with lid (knob lifted).
- Cook in the microwave for 5-6 minutes, or until the carrots are tender when pierced with a fork.
- Finish with lemon zest and chopped parsley.
Serving suggestions & tips
- For a spicy and smoky twist, add some chipotle adobo sauce to mixture before cooking.
- Add some grated ginger for a more flavorful side dish.
- For a lighter version of this side dish, use olive oil instead of butter.
- For a vegan version of this side dish, substitute the butter and honey for olive oil and maple syrup.
Recipe notes
- If using baby carrots, make sure to microwave with the lid slightly ajar, as the extra moisture in them can cause the dish to be watery.
- Microwave ovens vary, even with the same wattages. Adjust cooking times as needed.
