Ingredients

For the lettuce wraps:

  • 4 oz (115g) ground pork or chicken
  • ¼ cup (30g) red bell pepper, diced
  • 1 tablespoon ginger, finely chopped
  • 4 scallions, thinly sliced
  • 2 tablespoons soy sauce
  • 1 teaspoon rice vinegar
  • 2 tablespoons oyster sauce
  • 2 tablespoons water chestnuts, diced
  • 4-6 Boston or Bibb lettuce leaves
  • Fresh cilantro or mint leaves, for garnish (optional)

For the sauce:

  • ¼ cup vegetable oil
  • 1 tablespoon minced ginger
  • 4 scallions, thinly sliced
  • 2 tablespoons soy sauce
  • 1 teaspoon rice vinegar
  • 1 tablespoon oyster sauce

Preparation

  1. Add pork, pepper, ginger, scallions, soy sauce, rice vinegar, oyster sauce, and water chestnuts into the Anyday and mix well. Cover with lid (knob lifted) and cook in the microwave for 2-3 minutes or until the pork is partially cooked.
  2. Stir well, then continue cooking for 2-3 minutes or until the pork is fully cooked and the sauce has thickened.
  3. For the sauce, place the oil, ginger, and scallion in a separate Anyday and mix well. Cover with lid (knob lifted) and cook for 2-3 minutes, or until the scallions begin to soften. Add the soy sauce, rice vinegar, and oyster sauce and stir well.
  4. Serve the meat in the lettuce leaves and enjoy with the scallion sauce.

Suggestions

  • If you are looking for a spicier version, add chili flakes or Bird’s eye chilis in the sauce.
  • For a vegan substitute, try your favorite plant-based meat alternative.
  • Top with crushed peanuts for a satisfying crunch.
  • Add garlic and lemongrass for an extra aromatic twist.

Recipe Notes

  • This recipe does not use oil to cook the ground meat because the chicken or pork already contains enough moisture to cook through. However, these lean meats can be lacking in flavorful fat which we make up for in the scallion sauce!
  • Use a wooden spoon to break up the meat into small crumbles for the lettuce cups.
  • Microwave ovens vary, even with the same wattages. Adjust cooking times as needed.
