The Medium Deep Dish

Ingredients

  • 2 tablespoons vegetable oil
  • ½ teaspoon mustard seeds
  • ¼ teaspoon chili flakes
  • 2 tablespoons raw cashew pieces
  • ¼ cup (30g) onion, finely chopped
  • ¼ cup (30g) green bell pepper, diced 
  • 1 teaspoon ginger, finely chopped
  • teaspoon ground turmeric
  • ½ teaspoon salt
  • 1 (8.5 oz) package Maya Kaimal Basmati Rice
  • 2 tablespoons fresh lemon juice

Preparation

  1. Combine the oil, mustard seeds, red peppers, cashew nuts, onion, bell peppers, ginger, turmeric, and salt in the Anyday. Cover with lid (knob lifted) and cook in the microwave for 1-2 minutes, or until the aromatics have softened.
  2. Add the Maya Kaimal Basmati Rice and stir to combine. Cover with lid (knob lifted) and continue cooking for 2-3 minutes or until rice is warm.
  3. Add the lemon juice and stir to combine.

Suggestions

  • Serve with spice-rubbed chicken thighs or grilled vegetables for a complete dinner.
  • Add a pinch of red pepper flakes for an extra kick.
