The Medium Deep Dish

Ingredients

  • 1 cup (120g) yellow onion, diced small
  • 4 strips thick-cut bacon, diced
  • ¼ teaspoon baking soda
  • 1 teaspoon whole-grain mustard
  • 1 tablespoon brown sugar
  • 1 tablespoon balsamic vinegar

Preparation

  1. Place the onion, bacon, baking soda, mustard, and brown sugar in the Anyday dish, and stir to combine.
  2. Cook uncovered in the microwave for 9 minutes or until the jam achieves a golden-brown color.
  3. Add the balsamic vinegar and stir until fully incorporated.
  4. Transfer to an airtight container and store in the fridge for up to 10 days.

Suggestions

  • Serve with toasted bread, crackers, or chips.
  • Substitute bacon for pancetta, prosciutto or guanciale.
  • Add chili flakes for a spicy kick.
