The Medium Deep Dish

Ingredients

  • 1 bell pepper, whole
  • 2 tablespoons olive oil
  • 2 basil leaves, thinly sliced
  • 2 garlic cloves, thinly sliced or finely chopped


Preparation

  1. Place the whole peppers in the Anyday dish. Cover with the lid (knob lifted). 
  2. Cook in the microwave for 6-7 minutes, or until the peppers look slightly wilted.
  3. Allow the peppers to cool with the lid on for 5 minutes. Then, carefully remove the stem, seeds, and skin. If you're noticing that the peppers are difficult to peel, add more time in 30 seconds to 1 minute intervals until the peppers are more tender and the skin peels off faster.
  4. Cut the pepper flesh into thick slices and toss with olive oil, garlic, and basil. Enjoy warm or cold.

  • Use these peppers to top pizzas and flatbreads.
