Traditionally, roasted peppers are cooked over an open flame. With Anyday, save time and effort by using the microwave, which gently steams the bell peppers and helps make the peeling process a breeze. Drizzle with good olive oil, and toss with sliced garlic and fresh herbs for the quickest and juiciest “roasted” marinated peppers.
All of Anyday’s recipes are tested (and retested!) in many different microwave and home kitchens to make sure they work—, and work well. Unless specified otherwise, all recipes should be cooked at full power.

What You’ll Need
The Medium Deep Dish
The best dish for 1-2 portions of grains, veggies, mac and cheese, ramen, and more.
The Anyhand Mitts
Handle hot Anyday dishes with care with these microwave mitts that double as trivets!
Ingredients
- 1 bell pepper, whole
- 2 tablespoons olive oil
- 2 basil leaves, thinly sliced
- 2 garlic cloves, thinly sliced or finely chopped
Preparation
- Place the whole peppers in the Anyday dish. Cover with the lid (knob lifted).
- Cook in the microwave for 6-7 minutes, or until the peppers look slightly wilted.
- Allow the peppers to cool with the lid on for 5 minutes. Then, carefully remove the stem, seeds, and skin. If you're noticing that the peppers are difficult to peel, add more time in 30 seconds to 1 minute intervals until the peppers are more tender and the skin peels off faster.
- Cut the pepper flesh into thick slices and toss with olive oil, garlic, and basil. Enjoy warm or cold.
Serving suggestions & tips
- Add black olives, diced feta cheese, and cherry tomatoes for a delicious bruschetta-like topping.
- Use these peppers to top pizzas and flatbreads.
- Chop the marinated peppers into salads, pasta, rice, or meat dishes.
Recipe notes
- Use a mixture of colors for an eye-catching result.
- Microwave ovens vary, even with the same wattages. Adjust cooking times as needed.
