This creamy pasta dish celebrates spring with fresh peas and asparagus. It might seem like a lot of water, but don’t worry! The remaining pasta water will help create a smooth, creamy, emulsified sauce.

Wattage translates to how powerful the microwave is. The higher the wattage, the faster your food will cook. The lower the wattage, the longer the cook time.

When in doubt, start with less time — you can always add more.

The Medium Deep Dish

Ingredients

  • cups (120g) short pasta, such as casareccia 
  • cups (410ml) water
  • ½ teaspoon salt, plus more to taste
  • 1 tablespoon olive oil
  • ¼ (30g) small red onion, thinly sliced
  • ¼ cup (40g) frozen peas
  • 6 asparagus stalks, ends trimmed and cut into 1” pieces
  • 3 tablespoons (40g) sour cream, creme fraiche, or Greek yogurt
  • 1 teaspoon fresh lemon juice
  • 3 tablespoons grated parmesan cheese
  • 2 tablespoons crispy onions or shallots

Preparation

  1. Add the pasta, water, salt, olive oil, and red onion in the Anyday dish and stir to combine. Cook uncovered for 8-9 minutes, or until the pasta is al dente. 
  2. Add the peas and asparagus, stir to combine and continue cooking for 2-3 minutes, or until the asparagus is tender.
  3. Toss in the sour cream, lemon juice, and parmesan and mix well.
  4. Top with crispy shallots or onions and enjoy.

Serving suggestions & tips

  • Add some dry mushrooms for a delicious earthy twist.
  • Add cooked crab meat alongside the veggies for a delicious seaside-inspired meal.
  • Enjoy cold as a pasta salad. If needed add some creamy dressing or tzatziki sauce to give it a summer salad feel. 

Recipe notes

  • If red onions are unavailable, use spring onions or ramps instead.
  • If the water overflows, you can switch to a Large Deep or Extra Large, or reduce to Power Level 8 and then continue cooking.
  • Microwave ovens vary, even with the same wattages. Adjust cooking times as needed
