The magic ingredient to make this juicy pulled pork is simple: time. Gently microwaving pork for nearly two hours might seem like forever, but the result is unbelievably fork-tender pork that pulls apart to the touch. Plus, that's a fraction of the time that the oven or slow cooker takes.
All of Anyday’s recipes are tested (and retested!) in many different microwave and home kitchens to make sure they work— and work well. Unless specified otherwise, all recipes should be cooked at full power.

The Anyhand Mitts
Handle hot Anyday dishes with care with these microwave mitts that double as trivets!
Ingredients
- 2 tablespoons paprika
- 2 tablespoons garlic powder
- 1 tablespoon black pepper
- 1 tablespoon cumin powder
- 1 tablespoon chili powder
- 1 tablespoon dry mustard powder
- 1 tablespoon coriander powder
- 1 teaspoon cayenne powder
- 2 tablespoons brown sugar
- 1 tablespoon salt
- 2 tablespoons apple cider vinegar
- ¾ cup (160ml) water or chicken stock
- 2 lbs (900g) boneless pork butt or shoulder, cut into large chunks to fit
- Barbecue sauce, to serve
Preparation
- Mix all the dry ingredients until well incorporated. Rub the pork with the dry seasoning, then transfer to the Anyday dish. Add the cider vinegar and water or stock, and cover with the lid (knob lifted).
- Cook in the microwave at Power Level 5tooltip for 1 hour.
- Flip the meat, cover, and continue cooking at Power Level 5 for 45 minutes, or until the meat is tender and shreds easily.
- Transfer the pork to a cooling rack with a tray underneath to catch juices.
- Pull the meat apart with 2 forks and transfer to a bowl. If desired, you can remove some of the fat from the pork meat.
- Toss shredded pork in enough barbecue sauce to coat, and season with leftover juices to your liking. Serve pork on buns or by itself.
Serving suggestions & tips
- Add some chipotle sauce into the dish for a smokier touch.
- Substitute the vinegar for Coca-Cola for a sweeter dish.
- Microwave ovens vary, even with the same wattages. Adjust cooking times as needed.
