  • 1 tablespoon unsalted butter
  • 2 eggs
  • 1 tablespoon sour cream or mayo
  • Salt, to taste

Preparation

  1. Melt butter in the Anyday dish. Add the remaining ingredients and whisk until fully incorporated.
  2. Cook uncovered in the microwave in 30-second intervals for 1 minute and 15 seconds, whisking (not stirring!) each time to achieve the classic scrambled egg curds. 
  3. Continue cooking for 20 seconds. On the last whisk, some egg might still be liquid, but as you whisk it will all finish cooking.
  4. Enjoy as-is or over toast.

  • You can swap the mayonnaise with melted butter for a delicious result.
  • Add some chopped herbs for a fresh flavor.
