This dish, a former favorite recipe in Chef David Chang’s restaurants, is a play on horseradish wasabi peas. Sugar snap peas retain their integrity, vibrancy, and crunch when they’re steamed in the microwave. Seasoned with soy sauce, butter, salt, and lemon juice, then topped with grated fresh horseradish, and sliced radishes, this simple side dish packs a punch.

Ingredients
- 16 oz (450g) sugar snap peas, tough filament removed
- 2 tablespoons unsalted butter
- 2 tablespoons soy sauce
- 2 teaspoons lemon juice
- Grated fresh horseradish
- 8 breakfast radishes, thinly sliced
Preparation
- Place the snap peas, butter, soy sauce, and lemon juice in the Anyday. Cover with the lid (knob lifted). Cook in the microwave for 1-2 minutes or until snap peas are cooked but still crunchy and bright green.
- Grate the horseradish on top of the snap peas and mix in the radishes. Serve while warm.
Serving suggestions & tips
- Try it with prepared or creamed horseradish if fresh is not available.
- Add some thinly sliced green apples for extra freshness.
- Try it with some fresh chopped dill at the end.
Recipe notes
- This recipe can be made with green beans or snow peas if sugar snaps are not available.
- Microwave ovens vary, even with the same wattages. Adjust cooking times as needed.
