A smooth yogurt base rests atop a pistachio shortbread crust, studded with naturally sweet dates. Garnish this stunning tart with pomegranate seeds and a light drizzle of honey to complement the warm notes of cardamom.
All of Anyday’s recipes are tested (and retested!) in many different microwave and home kitchens to make sure they work— and work well. Unless specified otherwise, all recipes should be cooked at full power.

The Medium Shallow Dish

The Anyhand Mitts
Handle hot Anyday dishes with care with these microwave mitts that double as trivets!
Ingredients
For the crust
- ¼ cup (35g) all-purpose flour
- ⅛ teaspoon baking powder
- ¼ teaspoon cardamom
- 1 tablespoon sugar
- 2 tablespoons roasted unsalted pistachios, finely chopped
- 2 tablespoons unsalted butter, melted
- 1 tablespoon milk
For the filling
- 1 cup (230g) full-fat Greek yogurt
- ½ cup (120ml) heavy cream
- 2 tablespoons honey
- ¼ teaspoon vanilla extract
- 1 tablespoon cornstarch
- 2 large dates, pitted and roughly chopped
Preparation
- Make the pistachio shortbread crust: Lightly spray the bottom and sides of the Anyday dish with baking spray then line the bottom with a parchment paper round.
- In a separate bowl, mix the flour, salt, baking powder, cardamom, sugar, chopped pistachios, melted butter, and milk until a compact dough is formed.
- Press the dough into the Anyday, covering just the bottom of the dish as evenly as possible. Cook uncovered in the microwave for 1-2 minutes, or until the dough bubbles slightly.
- Sprinkle the roughly chopped dates on the surface of the dough.
- Make the filling: In a separate bowl, mix the yogurt, sour cream, honey, salt, vanilla, and cornstarch. Pour the yogurt mixture over the dates.
- Cook uncovered at Power Level 5tooltip for 9-10 minutes or until the custard jiggles slightly.
- Allow the tart to fully cool in the fridge for 3 hours (or overnight) before serving.
Serving suggestions & tips
- Garnish the tart with pomegranate seeds and a drizzle of honey.
- Substitute the vanilla for rose water extract.
- Try it with sour cream for a rich dessert.
- Swap the pistachios in the crust for walnuts, almonds, pecans, cashews, or pine nuts.
Recipe notes
- This tart is delicious the following day once all the flavors have enough time to combine.
- Microwave ovens vary, even with the same wattages. Adjust cooking times as needed.
