The Medium Shallow Dish

Ingredients

For the crust

  • ¼ cup (35g) all-purpose flour
  • teaspoon baking powder
  • ¼ teaspoon cardamom
  • 1 tablespoon sugar 
  • 2 tablespoons roasted unsalted pistachios, finely chopped
  • 2 tablespoons unsalted butter, melted
  • 1 tablespoon milk

For the filling

  • 1 cup (230g) full-fat Greek yogurt
  • ½ cup (120ml) heavy cream
  • 2 tablespoons honey
  • ¼ teaspoon vanilla extract
  • 1 tablespoon cornstarch
  • 2 large dates, pitted and roughly chopped

Preparation

  1. Make the pistachio shortbread crust: Lightly spray the bottom and sides of the Anyday dish with baking spray then line the bottom with a parchment paper round.
  2. In a separate bowl, mix the flour, salt, baking powder, cardamom, sugar, chopped pistachios, melted butter, and milk until a compact dough is formed.
  3. Press the dough into the Anyday, covering just the bottom of the dish as evenly as possible. Cook uncovered in the microwave for 1-2 minutes, or until the dough bubbles slightly.
  4. Sprinkle the roughly chopped dates on the surface of the dough.
  5. Make the filling: In a separate bowl, mix the yogurt, sour cream, honey, salt, vanilla, and cornstarch. Pour the yogurt mixture over the dates.
  6. Cook uncovered at Power Level 5tooltip for 9-10 minutes or until the custard jiggles slightly.
  7. Allow the tart to fully cool in the fridge for 3 hours (or overnight) before serving.

Serving suggestions & tips

  • Garnish the tart with pomegranate seeds and a drizzle of honey.
  • Substitute the vanilla for rose water extract.
  • Try it with sour cream for a rich dessert.
  • Swap the pistachios in the crust for walnuts, almonds, pecans, cashews, or pine nuts.
