Ingredients
- 2 teaspoons olive oil
- 2 garlic cloves, minced
- ½ cup (60g) diced yellow onion
- 8 oz (225g) Italian sausage, removed from casing and broken into pieces
- 2 medium potatoes (220g), cut into 1” pieces
- 2 cups (70g) kale, thinly sliced
- 3 cups (700ml) chicken stock
- ½ teaspoon kosher salt
- ½ teaspoon dried oregano
- ½ cup (120ml) half and half or heavy cream
Preparation
- Add the olive oil, garlic, onion, sausage, potatoes, and kale to the Anyday dish and stir to mix well.
- Cover with lid (knob lifted) and cook in the microwave for 8-9 minutes, or until the potatoes are tender when pierced with a fork.
- Add the stock, salt, oregano, and half and half and continue cooking uncovered for 8-9 minutes, or until the soup is hot.
- Taste and adjust seasonings. Serve warm with crusty bread!
Serving suggestions & tips
- Add shredded chicken or cooked beans for a heartier soup.
- Substitute kale for spinach or Swiss chard.
- Keep it dairy free by using coconut milk or unsweetened plant base creamer instead of half and half.
Recipe notes
- We recommend using russet or Yukon potatoes in this recipe. You can also use peeled and chunked sweet potatoes.
- Microwave ovens vary, even with the same wattages. Adjust cooking times as needed.
