This recipe was inspired by the milk-poached chicken from Christopher Kimball's Milk Street. This surprising recipe cooks lean chicken in milk, resulting in a decadent dish that defies everything you thought you knew about the microwave. Lowering the power level prevents the protein from tightening, cooking the chicken gently and evenly. The Large Shallow Dish

Ingredients

  • 2 teaspoons cornstarch
  • ¼ cup water
  • ½ cup whole milk
  • 1 teaspoon oregano
  • ½ teaspoon salt
  • ½ teaspoon garlic powder
  • ½ teaspoon cumin
  • 1 lb (450g) boneless chicken breast (about 2 breasts)
  • 2 tablespoons cold unsalted butter, cubed
  • Freshly cracked black pepper, for garnish
  • Fresh parsley, dill, or basil, for garnish

Preparation

  1. Add the cornstarch, water, whole milk, salt, oregano, salt, garlic powder, and cumin to an Anyday Large Shallow dish, and whisk to combine.
  2. Using a fork, pierce the surface of the chicken all over; this will help reduce any popping sounds. Add the chicken to the dish, flipping to coat the chicken completely in the milk mixture.
  3. Cover with the lid and cook in the microwave at Power Level 6tooltip for 11-14 minutes. Flip the chicken halfway through for even cooking.
  4. Remove the chicken from the sauce and transfer it to a cutting board to rest for a few minutes.
  5. Allow the sauce to cool for 2-3 minutes, and then whisk in the chilled butter, waiting until each piece is melted before adding the next. Taste and adjust seasonings.
  6. Slice the chicken and serve with the sauce. Garnish with fresh-cracked black pepper and chopped herbs.

Serving suggestions & tips

  • The sauce is very creamy and thick, so serve with a fresh green salad for contrast!
  • Serve with bread, noodles, or rice to soak up all of the sauce.
  • Try it with some chimichurri or Trader Joe’s Zhoug sauce for a fresh and spicy kick.
