Ingredients
- 2 tablespoons unsalted butter, melted
- ½ cup (40g) graham cracker crumbs
- ¾ cup (175g) canned pumpkin puree (Libby’s 100% Pure Pumpkin)
- ½ cup (120ml) heavy cream
- ½ cup (80g) brown sugar
- 2 tablespoons cornstarch
- ¼ teaspoon kosher salt
- ½ teaspoon vanilla extract
- ½ teaspoon pumpkin spice
- ¼ teaspoon ginger powder
- Whipped cream, for serving (if desired)
- Toasted Pumpkin seeds, for serving (if desired)
Preparation
- Make the crust: Combine melted butter and the graham cracker crumbs and mix well. Evenly distribute the crust mixture (about 3 tablespoons) into each cup of the 1/2 Cup Anytime Freezer Trays and press to form the crust.
- Make the filling: In a separate bowl, whisk the pumpkin purée, heavy cream, brown sugar, cornstarch, salt, vanilla, pumpkin spice, and ginger until the mixture is smooth and creamy. Divide the mixture into each cavity of the Freezer Trays and smooth out the top.
- Cook in the microwave uncovered at Power Level 4tooltip for 5:30-6 minutes per tray, or until the batter puffs slightly on the side and gently jiggles when gently shaken.
- Cool completely in the fridge, for about 1 hour. Serve with whipped cream and garnish with pumpkin seeds, if desired.

- Add dark chocolate chips to the filling for a decadent twist.
- Top each bite with whipped cream and toasted pumpkin seeds.
- Top with candied nuts instead of pumpkin seeds.
