Cooking shrimp in the microwave is our favorite way to achieve fast, perfectly cooked seafood on a weeknight. Plus, it traps all of the pesky seafood flavors! In this dish, sweet shrimp are cooked in a rich, dark sauce made with fermented black beans. You can find Black Bean-Chili paste in your local Asian market!

Ingredients
- ¼ cup (30g) red bell pepper, diced
- ¼ cup (30g) yellow onion, thinly sliced
- 3 garlic cloves, finely chopped, or 1 teaspoon garlic powder
- 1 teaspoon fresh ginger, grated
- 1 tablespoon sesame oil
- 2 tablespoons black bean garlic sauce
- 2 tablespoons oyster sauce
- 2 tablespoons soy sauce
- 2 tablespoons water
- 2 teaspoon sugar
- 3 teaspoons cornstarch
- 8 oz (225g) shrimp, peeled and deveined
- 2 scallions, thinly sliced
Preparation
- Place red pepper, onion, garlic, ginger, sesame oil, black bean sauce, oyster sauce, water, sugar, cornstarch, and salt into the Anyday and mix to combine.
- Cover with lid (knob lifted) and cook in the microwave for 3-4 minutes, or until the sauce is thickened and fragrant.
- Stir the sauce, add the shrimp, and continue cooking for 4-5 minutes, or until the shrimp are cooked through.
- Top with scallions and enjoy.
Serving suggestions & tips
- To bulk up the vegetables in this dish, substitute peppers with bok choy or cabbage.
- Use chicken, tofu or pork loin instead of shrimp. Be sure to adjust cook times as needed!
- Top with chili crisp or chili oil for a spicy kick.
Recipe notes
- Why use a Shallow Anyday dish? Shrimp need plenty of room to spread out to cook evenly. A Shallow Anyday dish offers more surface area on the bottom, giving the shrimp enough room to steam to perfection!
