This meal packs a nutritional punch with antioxidant-rich spinach and cauliflower. Bright and savory, it’s great as a standalone meal or atop grains, scrambled eggs, and meat.

Ingredients
- ½ cup (50g) riced cauliflower
- 1 cup (90g) frozen spinach, partially thawed
- 2 tablespoons water, chicken stock, or vegetable stock
- salt, to taste
Preparation
- Place all the ingredients into the Anyday dish. Cover with the lid (knob lifted).
- Cook in the microwave for 5-6 minutes, or until the cauliflower is tender.
- Using an immersion blender or blender, puree until the mixture is as smooth or as chunky as you desire. Season to taste.
Serving suggestions & tips
- Add some butter for more flavor and texture.
- Feed just as a puree on its own, or mix it with some cooked rice or other grains if you’re starting on chunky foods.
- Serve with scrambled eggs or cooked meats.
Recipe notes
- Freeze the pure in the 1/2 Cup Anytime Freezer Trays and reheat when needed.
- Microwave ovens vary, even with the same wattages. Adjust cooking times as needed.
