Sticky toffee pudding that can be made on a weeknight. Yes, you read that right. This decadent dessert can be made in less than 20 minutes and is gorgeously silky when steamed in the microwave. Plumped dates and store-bought caramel sauce bring it over the top.

Ingredients
- 2 tablespoons (28g) butter, melted
- ⅓ cup (75g) brown sugar
- ⅓ cup (80ml) water
- 1 egg yolk
- 5 dates (85g), finely chopped
- ⅓ cup plus 1 tablespoon (73g) all-purpose flour
- ¼ teaspoon baking soda
- ¼ cup (150g) store-bought caramel sauce
Preparation
- In a separate medium bowl, add all the ingredients except the caramel sauce. Mix until a smooth batter forms.
- Lightly spray Anyday dish with non-stick spray or grease with butter. Pour in batter.
- Cook uncovered in the microwave for 2-3 minutes, or until the cake is set.
- Pour caramel sauce into a separate microwave-safe dish. Heat in the microwave for one minute.
- Pierce the surface of the sticky toffee pudding with a fork or toothpick, then pour the heated caramel sauce over the pudding in an even layer to absorb.
- Let pudding cool, then enjoy with more warm caramel sauce if desired.
Serving suggestions & tips
- Great with vanilla gelato, ice cream, or whipped cream.
- Makes for a nice dessert or afternoon treat.
- Top with toasted nuts for some crunch!

- This recipe can be made up to 3 days ahead of time. Cover it with the lid in the closed position and refrigerate until needed.
