Sweet Potato Purée

Simple and versatile, this puree pairs well everything from cooked grains to shredded chicken. It doesn’t hurt that sweet potatoes are rich in essential nutrients like beta carotene (great for eye and skin health). This recipe works great with yams, sweet potatoes, or even purple sweet potatoes for an especially colorful meal.

To find your microwave’s wattage, look at the front panel, the side of the door, in the back, in the user manual, or Google the model number. If both an input and output wattage are listed, use the output.

Wattage translates to how powerful the microwave is. The higher the wattage, the faster your food will cook. The lower the wattage, the longer the cook time.

When in doubt, start with less time — you can always add more.

Ingredients

  • 1 (340g) medium sweet potato, peeled and diced in medium chunks 
  • ¼ cup (60ml) water, chicken stock, or vegetable stock 
  • salt, to taste 
  • 1 tablespoon breast milk or formula (optional)

Preparation

  1. Place all the ingredients except the milk into the Anyday dish. Cover with the lid (knob lifted).
  2. Cook in the microwave for 15 minutes, or until the sweet potatoes are very soft when pierced with a fork.
  3. Using an immersion blender or blender, puree until mixture is as smooth or chunky as you like. If using breast milk or formula, add it during the blending process. Season to taste.

Serving suggestions & tips

  • Add some butter for more flavor and texture. 
  • Feed just as a puree on its own, or mix it with some cooked rice or other grains if you’re starting on chunky foods. 
  • Also great served with chunks of fish, chicken, or turkey.
  • Microwave ovens vary, even with the same wattages. Adjust cooking times as needed.
