Cod is tender and perfectly cooked when steamed in the microwave. We paired it with a tangy Vietnamese-inspired vinaigrette and served it with rice noodles for a quick and delicious meal.

Wattage translates to how powerful the microwave is. The higher the wattage, the faster your food will cook. The lower the wattage, the longer the cook time.

The Medium Shallow Dish

Ingredients

For the fish:

  • 2 4-6oz cod fillets
  • ½ inch piece (13g) ginger, minced
  • 2 cloves garlic, minced, divided
  • 1 tablespoon oil
  • 1 tablespoon soy sauce
  • Salt, to taste

Nuoc cham

  • ½ medium thai or fresno chili, finely chopped
  • ½ tablespoon fish sauce
  • ½ tablespoon lime juice
  • ½ tablespoon sugar
  • teaspoon turmeric
  • ½ tablespoon shallot, minced
  • 1 ½ tablespoons water
  • Garnish: fresh chopped cilantro, crushed peanuts, and bean sprouts

Preparation

  1. Combine cod, ginger, half the garlic, oil, soy sauce, and salt in the Anyday dish. Stir to coat. Cover with the lid (knob lifted).
  2. Cook in the microwave for 4-5 minutes, or until the fish is cooked through.
  3. Make nuoc cham: in a separate bowl, mix chili, fish sauce, lime juice, sugar, half of garlic, turmeric, shallot, and water. Stir until sugar dissolves.
  4. Spoon nuoc cham over fish to serve. Garnish with cilantro, peanuts, and bean sprouts.

Serving suggestions & tips

  • Try it with halibut, mahi-mahi, salmon, or bass.
  • Serve with rice or noodles.
  • Enjoy with a side of steamed veggies for a lighter meal.

Recipe notes

  • Marinate the fish overnight with all the ingredients and the lid with the knob in close position for better flavor.
  • Microwave ovens vary, even with the same wattages. Adjust cooking times as needed.
