Ingredients
- 1 cup (200g) pumpkin purée
- 1½ cups (350ml) vegetable stock
- 2 tablespoons brown sugar
- 1 teaspoon pumpkin pie spice
- 1 teaspoon garlic powder
- 1 teaspoon kosher salt
- ¼ teaspoon cayenne pepper
- ¼ teaspoon black pepper
- 1 tablespoon unsalted butter
- ¼ cup (60ml) heavy cream
- Toasted pumpkin seeds, for garnish (optional)
- Sour cream, for garnish (optional)
- Fried sage leaves, for garnish (optional)
Preparation
- Add pumpkin puree, vegetable stock, brown sugar, pumpkin pie spice, salt, garlic powder, cayenne, black pepper, and butter to an Anyday Deep dish and stir to combine.
- Cover with lid (knob lifted) and cook in the microwave for 4-5 minutes. The soup should be hot and simmering.
- Add the heavy cream. Carefully transfer soup to a blender (or use an immersion blender) and process until smooth.
- Portion soup into bowls and top with pumpkin seeds, fried sage, and sour cream, if desired.
Serving suggestions & tips
- You may brown the butter ahead of time for extra flavor.
- Stir in steamed rice for a heartier soup.
- Enjoy with a grilled cheese sandwich or a fresh salad.
Recipe notes
- This recipe works well with any fresh or canned pumpkin or winter squash puree. Make sure not to use pumpkin pie filling.
- Transfer the soup to the Anytime Freezer Trays and save for up to 3 months.
- If you don’t have pumpkin pie spice on hand, substitute with a blend of ground cinnamon, ginger, allspice, cloves and nutmeg.
- Microwave ovens vary, even with the same wattages. Adjust cooking times as needed.
