Few desserts capture the essence of fall better than a warm, well-spiced, buttery apple crisp (preferably a la mode!). Crisps usually cook in well over 30 minutes, but this one's ready in half the time — no oven preheating required. For a crispy browned top, finish cooking in a 450°F oven for a few minutes.

Ingredients

For the Apple Filling

  • 2 apples, peeled, seeded and diced (1 ½ cups, 200)
  • 2 tablespoons brown sugar
  • 2 teaspoons lemon juice
  • ½ teaspoon ground cinnamon
  • ¼ cup (65g) apple sauce
  • 1 teaspoon cornstarch

For the Crisp Topping

  • 2 tablespoons butter, melted
  • 2 tablespoons brown sugar
  • ¼ cup (25g) old-fashioned whole rolled oats
  • 2 tablespoons all-purpose flour
  • ½ teaspoon ground cinnamon
  •   teaspoon salt


Preparation

  1. Mix all the ingredients for the filling in an Anyday dish and set aside. (NOTE: The smaller you cut the apples, the softer they will be. Cut to the texture of your liking.)
  2. In a separate bowl, mix the crisp topping ingredients until well incorporated. Sprinkle the topping mixture over the apple mixture, making sure the apples are evenly covered. Covered with lid (knob lifted)
  3. Cook in the microwave for 5-6 minutes, or until the edges bubble up and the topping feels firm.
  4. Allow the crisp to cool slightly. Serve warm or cold.

Serving suggestions & tips

  • For an even easier crisp, top the apple mixture with pre-made granola before cooking.
  • Add chopped almonds to the topping for a crunchier crisp.
  • Enjoy with whipped cream or vanilla ice cream.
  • Substitute apples for pears, peaches, plums, or apricots.
