Arash Hashemi’s Chilean Sea Bass

We adapted Arash’s original recipe for keto Chilean Sea Bass to the microwave. (With Anyday, anything is possible!) Buttery sea bass filets are coated with a simple sauce of soy sauce, garlic chili sauce, and rice vinegar and gently cooked to perfection in the microwave. The lid keeps the sauce from evaporating so you’re left with extra flavor goodness.
All of Anyday’s recipes are tested (and retested!) in many different microwave and home kitchens to make sure they work— and work well. Unless specified otherwise, all recipes should be cooked at full power.

Flash-steam small portions of food in the microwave, evenly reheat leftovers, or store food in the fridge with the lid’s airtight seal.
The Anyhand Mitts
Ingredients
- 2 (4-6 oz) chilean sea bass filets, skin on
- ¼ teaspoon salt
- 1 tablespoon soy sauce
- 1 tablespoon garlic chili sauce
- 1½ teaspoons rice vinegar
- 1 teaspoon sesame seeds
Preparation
- Add the soy sauce, garlic chili sauce, and rice vinegar to the Anyday dish and mix to combine.
- Pat dry the fish on both sides and season with salt, then place the filets skin side down in the Anyday dish. Spoon sauce over the fish, then cover with the lid (knob lifted). Cook in the microwave for 5-6 minutes or until the fish is fully cooked. (Thinner fillets will take less time and thicker fillets may take longer.)
- Top with sesame seeds and enjoy.
Serving suggestions & tips
- If desired, pat dry and sear the skin on a heated pan with a little bit of oil first.
- Try this same method with a different fish such as salmon, halibut, mahi mahi or cod.
