If your favorite way to procrastinate is baking, this recipe is for you. Making banana bread in the microwave yields an unbelievably moist loaf in record time. We add chopped walnuts, but you can use chocolate chips for a more decadent treat.

Wattage translates to how powerful the microwave is. The higher the wattage, the faster your food will cook. The lower the wattage, the longer the cook time.

When in doubt, start with less time — you can always add more.

The Medium Deep Dish

Ingredients

  • Cooking spray
  • 1 cup (120g) all-purpose flour
  • ½ cup (95g) brown sugar
  • ½ teaspoon baking soda
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon kosher salt
  • 1 banana, very ripe
  • 1 teaspoon vanilla extract
  • ¼ cup (60g) unsalted butter, melted
  • ½ cup (120ml) water
  • 3 tablespoons honey
  • 3 tablespoons walnuts, chopped

Preparation

  1. Thoroughly coat the inside of the Anyday dish with cooking spray or grease with butter.
  2. Cut a piece of parchment paper the size of the bottom of the bowl, and place it inside the bowl.
  3. In a separate large mixing bowl, combine the flour, brown sugar, baking soda, cinnamon, and salt and mix well.
  4. Smash the banana and add to the dry ingredients along with the vanilla extract, melted butter, water, honey, and chopped walnuts.
  5. Mix all of the ingredients well, then pour into the prepared Anyday dish.
  6. Cook uncovered in the microwave for 8-9 minutes, or until the banana bread is bouncy to the touch and a toothpick inserted in the middle comes out clean.
  7. Allow to rest for 1 minute. Run a knife around the edges of the bowl to loosen. Place a flat serving plate on the bowl and carefully flip the vessel to unmold the banana bread.
  8. Remove the parchment paper and allow to cool before cutting.


Serving suggestions & tips

  • Make a light sour cream glaze by mixing sour cream and powdered sugar to taste. Whip the sour cream mixture and spread over the loaf.
  • Great for dessert, an afternoon snack, or a light treat in the morning.
  • Pairs beautifully with a dark chocolate and rum ganache.
