To find your microwave’s wattage, look at the front panel, the side of the door, in the back, in the user manual, or Google the model number. If both an input and output wattage are listed, use the output.

Wattage translates to how powerful the microwave is. The higher the wattage, the faster your food will cook. The lower the wattage, the longer the cook time.

When in doubt, start with less time — you can always add more.

Dish

The Small Square Dish

Ingredients

  • 1 teaspoon vegetable or sesame oil
  • 2 tablespoons shredded carrots
  • 1 teaspoon grated fresh ginger
  • 1 garlic clove, finely chopped
  • 1 tablespoon oyster sauce
  • 1 tablespoon dark soy sauce
  • ¾ cup (180ml) water or chicken stock
  • 2 oz (65g) wide rice noodles
  • ½ cup (115g) firm tofu, cut into ½-inch cubes
  • ½ bok choy, sliced
  • Fresh basil leaves, chopped (optional)
  • Scallions, thinly sliced (optional)

Preparation

  1. Place the oil, carrots, ginger, garlic, oyster sauce, soy sauce, and stock or water in a Square Anyday dish and stir to combine
  2. Add the noodles and mix them into the liquid, ensuring each piece is coated with the sauce.
  3. Top noodles with tofu and bok choy and cover with the lid (knob lifted).
  4. Cook in the microwave for 9 minutes, or until the noodles are tender. Allow the dish to sit for a few minutes before serving—the sauce will thicken as it cools.
  5. Top with basil leaves and scallions, if desired.

Suggestions

  • Add extra veggies: Add some more vegetables like sliced bell peppers, mushrooms, and broccoli for a colorful, nutrition-packed meal.
  • Spicy shrimp: Replace the tofu with fresh or frozen shrimp for a seafood twist.
  • Top with a poached egg: Add a poached egg on top for extra protein. Stir the broken yolk into the sauce for a rich and creamy texture.
  • Pair with pickles: Serve with a side of pickled vegetables like radishes or carrots for a tangy contrast to the spicy and savory flavors.

Recipe Notes

  • If you don’t have dark soy sauce, use regular soy sauce with a splash of molasses or brown sugar to mimic the flavor and color.
  • If using Anyday round dishes, you may need to break the noodles in half to fit them inside the dish.
  • Microwave ovens vary, even with the same wattages. Adjust cooking times as needed

All You Need to Know About Making Drunken Noodles in the Microwave

What are Drunken Noodles?

Drunken Noodles, or "Pad Kee Mao," is a popular Thai-inspired stir-fry dish known for its bold, savory flavors. Typically made with wide rice noodles, vegetables, and a flavorful sauce, this version combines tofu and bok choy with a rich, soy-based sauce for a quick and satisfying meal.

Can I make Drunken Noodles in the microwave?

Absolutely! This recipe is designed for the microwave using an Anyday dish. The silicone-lined lid traps gentle steam inside of the dish, ensures the noodles cook evenly, the tofu remains tender, and the sauce thickens beautifully.

Can I use other proteins in Drunken Noodles?

Yes, you can customize this recipe with your favorite proteins. Swap the tofu for shrimp, chicken, or beef, adjusting the cooking time slightly to ensure the protein is fully cooked.

Can I use other vegetables in Drunken Noodles?

Of course! This dish is very versatile. Substitute or add vegetables like bell peppers, snap peas, or broccoli to suit your taste. You can also use frozen vegetables! Adjust the cook time for heartier vegetables to ensure they cook through.

Why do I need to use the Square Dish for this recipe?

The Square Dish is ideal for this recipe because its shape fits the noodles without needing to break them. This helps ensure the noodles cook evenly in the sauce. If you’re using a round Anyday dish, simply break the noodles in half to fit them comfortably inside the dish. The cooking process and delicious results will remain the same.

How do I store leftover Drunken Noodles?

Allow the noodles to cool completely, then cover the Anyday dish with the lid and store it in the fridge for up to 3 days.

What’s the best way to reheat Drunken Noodles?

To reheat from the fridge, place the noodles in an Anyday dish, cover with the lid, and microwave on full power for 1-2 minutes, stirring halfway through.

Can I make Drunken Noodles gluten-free?

Yes! This recipe can easily be made gluten-free. Use gluten-free tamari or coconut aminos in place of soy sauce, and ensure your oyster sauce and other ingredients are gluten-free. Double-check all packaging to ensure there are no hidden gluten-containing additives.
