For the sauce


  • 2 tablespoons soy sauce
  • ¼ cup chicken stock or water
  • 1 tablespoon cornstarch
  • 1 teaspoon sugar
  • 1 garlic clove, chopped
  • 1 teaspoon grated ginger
  • ¼ teaspoon chili flakes

For the chicken


  • 2 boneless chicken thighs, cut into 1-inch pieces
  • ¼ cup (30g) diced red pepper
  • ½ cup (70g) chopped celery or zucchini
  • 1 tablespoon toasted and unsalted  peanuts, chopped
  • White rice, for serving (optional)

Preparation

  1. Place sauce ingredients in an Anyday dish and stir to combine. Cover with the lid (knob lifted).
  2. Cook in the microwave for 1-2 minutes, or until the sauce thickens. Be sure to stir well, as the cornstarch may settle at the bottom.
  3. Stir in the chicken, red pepper, and zucchini or celery. Continue cooking (covered) in the microwave for 4-5 minutes, or until the chicken is cooked through and the vegetables are crisp-tender. Stir halfway through to ensure the chicken is coated in the sauce as it cooks.
  4. Stir to mix the chicken with the sauce. Top with chopped peanuts and serve with white rice, if desired.
