Ingredients

  • 1 cup (150g) cherry tomatoes, halved
  • 1 tablespoon tomato paste
  • 2 tablespoons olive oil, divided
  • 2 cloves garlic, minced
  • ½ teaspoon dried oregano
  • 1 teaspoon smoked paprika
  • 2 (225g) chicken thighs, bone-in and skin-on
  • Salt, to taste
  • Black pepper, to taste

Preparation

  1. Combine tomatoes, tomato paste, olive oil, garlic, oregano, and smoked paprika in the Anyday dish and mix thoroughly.
  2. Season the chicken thighs with salt and pepper. Lay the thighs skin-side down on top of the tomato mixture. Cover with the lid (knob lifted).
  3. Cook in the microwave at Power Level 6tooltip for 9-10 minutes, or until tomatoes are soft and jammy and chicken is cooked most of the way through.
  4. Meanwhile, preheat your broiler.
  5. Transfer the chicken thighs to a sheet tray, skin side up. Broil for 2-3 minutes, or until skin is browned and crisp. Keep an eye on it, since it will go fast!
  6. Spoon sauce over chicken to serve.
