This is a classic potato salad — except faster and more colorful. Whole grain mustard, apple cider vinegar, and lemon lighten up this creamy side dish, while a flurry of dill brings the brightness.

Wattage translates to how powerful the microwave is. The higher the wattage, the faster your food will cook. The lower the wattage, the longer the cook time.

When in doubt, start with less time — you can always add more.

The Medium Deep Dish

Ingredients

  • 1⅔ cups (230g) baby potatoes, halved
  • 1 tablespoon olive oil
  • salt, to taste
  • black pepper, to taste
  • 1 tablespoon mayonnaise
  • 1 teaspoon whole grain mustard
  • 1 teaspoon apple cider vinegar
  • 1 teaspoon lemon juice
  • 1 teaspoon shallots, minced
  • teaspoons dill, chopped

Preparation

  1. Place the baby potatoes in an Anyday dish and rinse thoroughly under cold tap water. Using the Anyday Strainer, strain the excess water.
  2. After straining, add oil, salt, and pepper into the Anyday dish and stir until coated. Cover with the lid (knob lifted).
  3. Cook in the microwave for 5 minutes, or until the potatoes are fork tender. Drain any remaining water and let cool to room temperature
  4. In a separate bowl, mix together mayonnaise, mustard, apple cider vinegar, lemon juice, shallots, and dill.
  5. When potatoes are cool, add mayo mixture into the dish and stir until well-coated.

  • Mustard swap: Substitute whole grain mustard with Dijon mustard for a smoother, tangier flavor.
  • Herb boost: Brighten up the salad by adding fresh herbs like mint, chervil, parsley, or chives for a more vibrant flavor.

  • Bacon addition: Mix in crumble crispy bacon for a smoky, savory salad.

Recipe notes

  • If you potatoes have different shapes and sizes, stir halfway to prevent uneven cooking.

  • If you don’t have marble potatoes, dice Yukon Golds into similar-sized pieces for an easy replacement.

  • Microwave ovens vary, even with the same wattages. Adjust cooking times as needed.
