This sweet-and-salty spread is a party favorite! The onions caramelize in the microwave with bacon, brown sugar, and balsamic vinegar to make a craveable, jammy spread. Pair with Easy "Baked" BrieΒ for a festive appetizer spread in minutes.

Ingredients

  • 1 cup (120g) diced yellow or red onion
  • 4 strips thick-cut bacon, diced
  • ¼ teaspoon baking soda
  • 1 teaspoon whole grain mustard
  • 1 tablespoon brown sugar
  • 1 tablespoon balsamic vinegar

Preparation

  1. Place the onion, bacon, baking soda, mustard, and brown sugar in the Anyday dish, and stir to combine.
  2. Cook uncovered in the microwave for 13-14 minutes or until the jam achieves a golden-brown color.
  3. Add the balsamic vinegar and stir until fully incorporated.
  4. Transfer to an airtight container and store in the fridge for up to 10 days.

Serving suggestions & tips

  • Serve with toasted bread, crackers, or chips.
  • Substitute bacon for pancetta, prosciutto or guanciale.
  • Add chili flakes for a spicy kick.
