Coconut Poached Salmon
Poaching or slow-cooking in an Anyday dish is a game-changer when it comes to cooking salmon. Instead of drying out, your salmon will be soaking in a rich, aromatic broth made from creamy coconut milk and zesty lemongrass. If you haven’t tried lemongrass before, it’s like a citrusy, herbal hug for your taste buds, often found in Thai dishes. To round out the dish, we’ve added Swiss chard, which brings a touch of earthy sweetness that perfectly balances the flavors. It’s a dish that’s not only simple and quick in the microwave but also bursting with vibrant flavors and moisture. Trust us, this recipe will make you rethink your whole salmon game!
All of Anyday’s recipes are tested (and retested!) in many different microwave and home kitchens to make sure they work— and work well. Unless specified otherwise, all recipes should be cooked at full power.

d Salmon in the Microwave
Can I cook salmon in the microwave?
Absolutely! Cooking salmon in the microwave is both quick and convenient, especially when using Anyday cookware. For detailed instructions, check out our guides on How to Microwave Salmon and How to Microwave Frozen Salmon. Using Anyday dishes ensures even heat distribution, keeping your salmon perfectly moist and flavorful.
What is poaching, and how does it work with Anyday cookware?
Poaching is a gentle cooking method where food is simmered in a flavorful liquid to retain moisture and enhance flavor. To properly poach fish in the microwave, try lowering the power level to maintain a steady, gentle heat. This keeps the salmon tender and absorbs all the delicious flavors from the coconut milk and lemongrass.
How do I know when the salmon is perfectly cooked?
The salmon is ready when it flakes easily with a fork and is opaque throughout the entire filet. Poaching fish in coconut milk will keep it moist and tender, so check for these signs to make sure it's cooked just right. If you’re checking with a meat thermometer, the safe internal temperature of fish is 145°F.
Can I use other vegetables in this recipe?
Definitely! While Swiss chard adds a nice sweetness, feel free to substitute it with other leafy greens like spinach (fresh or frozen), bok choy, or thinly sliced kale. These veggies should cooked in the same amount of time as the Swiss chard.
Can I prep this recipe ahead of time?
Yes, you can definitely prep this recipe ahead of time! For the best results, marinate the salmon up to 24 hours in advance. Store in an Anyday dish in the refrigerator until you’re ready to cook. This makes it an ideal option for busy days or meal prep, allowing the flavors to meld and making your cooking time quicker and easier.
What’s the best way to save leftovers?
Store leftover Coconut Poached Salmon in an Anyday dish for up to 3-4 days in the refrigerator. If you need to freeze it, transfer the leftovers to a freezer-safe bag or container. Frozen leftovers can be kept for up to 2-3 months. To reheat, microwave from frozen, adding a splash of water to maintain moisture and ensure even heating.
What’s the best way to reheat this recipe?
