This traditional Thai dessert combines the warmth of coconut-infused glutinous rice with sweet, juicy mangoes. We've streamlined the traditional recipe, eliminating the need for a stovetop. When selecting mangoes, opting for Ataulfo or honey mangoes is key, as they offer the perfect blend of sweetness and tartness. If these aren't accessible, any ripe mango will suffice. Keep in mind that during cooking, some starchy water may seep around the knob, but this is expected due to rice's inherent starchiness.

- ½cup (100g) glutinous or sweet rice
- ¾ cup (240ml) water
- 1 tablespoon sugar
- ⅛ teaspoon kosher salt
- ½ cup (120ml) full-fat coconut milk
- 1 ripe mango, peeled and sliced
- Sweetened condensed milk, for serving (optional)
Preparation
- Place the rice in an Anyday dish and rinse thoroughly under cold tap water, swirling the rice around gently until the water becomes cloudy. Using the Anyday Strainer, strain the excess water. Repeat this process until the water runs clear.
- After straining, add in the water, sugar, and salt, stirring to combine. Cover with lid (knob lifted).
- Cook in the microwave for Power Level 5tooltip for 20 minutes or until the liquid is absorbed and the rice is tender. Note that some starchy water might rise up in the knob area during cooking — that is to be expected.
- Stir in the coconut milk, cover the rice with the lid, and allow it to soak in for about 10-15 minutes.
- Portion the rice and top with fresh mangoes. Drizzle with sweetened condensed milk, to taste.
