To find your microwave’s wattage, look at the front panel, the side of the door, in the back, in the user manual, or Google the model number. If both an input and output wattage are listed, use the output.

Wattage translates to how powerful the microwave is. The higher the wattage, the faster your food will cook. The lower the wattage, the longer the cook time.

When in doubt, start with less time — you can always add more.

The Medium Shallow Dish

Ingredients

  • 4 tablespoons feta cheese, crumbled (40g)
  • 2 tablespoons panko crumbs
  • 1 tablespoon parsley, finely chopped
  • 1 tablespoon lemon zest
  • teaspoon garlic powder
  • 1 8oz (225g) salmon filet
  • ¼ teaspoon salt
  • ¼ teaspoon ground black pepper
  • 2 tablespoons dry white wine
  • 1 tablespoon unsalted butter
  • ¼ teaspoon chili flakes
  • 2 tablespoons black olives, thinly sliced
  • 1 artichoke heart, quartered

Preparation

  1. In a bowl mix the feta cheese, panko, parsley, lemon zest, and garlic powder until a coarse crumble is formed.
  2. Season the salmon with salt and pepper and sprinkle with the panko mixture, making a ‘crust’ over the salmon. Set aside.
  3. Place the wine, butter, chili flakes, olives, and artichokes into the Anyday dish. Cover with the lid (knob lifted) and cook in the microwave for 2 minutes or until the liquids have come to a simmer and the butter is fully melted.
  4. Add the salmon (panko-crust side up) and continue cooking at Power Level 6tooltip for 2-4 minutes or until the fish is almost completely cooked. For thicker filets, add another 1-2 minutes of cooking time.
  5. Serve the salmon alongside the sauce and vegetables.

All You Need to Know About Making Mediterranean Poached Salmon in the Microwave

What does it mean to “poach” fish?

Poaching is a technique that gently cooks food in a simmering liquid, keeping it tender and moist. This Mediterranean poached salmon recipe is super easy and flavorful. You'll poach the salmon in white wine with garlic and lemon, then add savory feta and artichokes for a tangy twist, and top it with crispy panko for crunch. Using an Anyday dish keeps the salmon moist and delicious. Perfect for a quick weeknight dinner or impressing guests. Can I cook salmon in the microwave?

es, you can cook salmon in the microwave using an Anyday dish. This method is quick, easy, and retains the moisture and flavor of the salmon. When cooking salmon on its own we usually recommend lowering the power level, but in this case, the added ingredients allow you to cook at full power, and the moisture from the other ingredients will ensure that the salmon won’t dry out.

Can I use other types of fish instead of salmon?

Yes, you can substitute salmon with other fish like cod, halibut, or mahi-mahi. You may need to reduce the cooking time by 1-2 minutes depending on how thick the fish is since thinner white fish tends to cook faster than thicker cuts of salmon.

Can I use frozen salmon fillets for this recipe?

Yes, you can use frozen salmon fillets and you won’t even need to thaw the fish! Just follow the recipe as written and add 1-2 more minutes of cooking time if the fish is not done cooking. The cooking times may also depend on the thickness of the fish, the thicker the portion, the more time you will need to add. For cooking frozen salmon filets on their own, follow the directions in this recipe.

Can I prepare the crust in advance?

Yes, you can prepare the seasoned panko two days ahead of time and keep it fresh in an Anyday dish with the lid on in a dry place such as the pantry. When ready to cook, simply combine the bead crumbs with the salmon in the Anyday dish as directed in the recipe. Learn how to make your own dried herbs by following this recipe.

How do I know when the salmon is fully cooked?

The salmon is fully cooked when it turns pale pink and flakes easily with a fork. If needed, ensure that the internal temperature reaches 145°F (63°C) when using a kitchen thermometer.
