For the cake
- 2 tablespoons unsalted butter, melted
- 3½ tablespoons whole milk
- ¼ teaspoon vanilla extract
- 2 tablespoons granulated sugar
- ¼ cup (38g) all-purpose flour
- ¼ teaspoon baking powder
- Pinch kosher salt
For the filling
- 4 oz (115g) mascarpone cheese
- 4 oz (115g) cream cheese, softened
- ¼ cup (50g) granulated sugar
- ¼ cups (600ml) heavy whipping cream
For the soaker
- ½ cup (120ml) coffee, at room temperature
- 2 tablespoons instant coffee
- ⅓ teaspoon sugar (optional)
Preparation
- Make the cake: In a Square dish, combine all cake ingredients and mix until a batter forms, being careful not to over mix. Scrape down the sides, then cover with lid (knob lifted).
- Cook in the microwave for 2-3 minutes, or until the cake is bouncy to the touch. To test if the cake is done, gently insert a toothpick or cake tester into the center of the cake and if it comes out clean, the cake is ready.
- Make the mascarpone filling: While the cake cools, mix mascarpone, cream cheese, and sugar until smooth. Add cream and mix until fully incorporated. Set aside.
- Make the soaker: Stir instant coffee into the cooled coffee and add sugar to taste, if desired. Pour the soaker over the cooked caked and set aside.
- Assemble the cake: Once the soaker is fully absorbed, top the cake with the mascarpone mixture, spreading the cream evenly with an offset spatula.
- Cover with the lid and chill in the refrigerator for at least 3 hours before serving. When ready to serve, dust the top with an even layer of cocoa powder.

- Salted caramel: Spread a layer of salted caramel sauce on top of the cake before adding the mascarpone filling for a rich, sweet contrast.
