Wattage translates to how powerful the microwave is. The higher the wattage, the faster your food will cook. The lower the wattage, the longer the cook time.

The Medium Deep Dish

Ingredients

  • 1 can (14 oz) black-eyed peas, rinsed and drained
  • 2 tablespoons unsalted butter
  • ¼ cup (60g) bacon or ham steak, diced
  • ¼ cup (30g) yellow onion, diced
  • ¼ cup (30g) green bell pepper, diced
  • ½ celery stalk, finely chopped
  • 2 garlic cloves, finely chopped
  • ½ tablespoon Cajun seasoning
  • ¼ cup (60 ml) chicken stock
  • ¼ teaspoon black pepper
  • ½ teaspoons kosher salt
  • Cooked white rice, for serving (optional)
  • Chopped fresh parsley, for garnish (optional)

Preparation

  1. Add all the ingredients to Anyday dish and stir to combine. Cover with lid (knob lifted).
  2. Cook in the microwave 6 minutes, or until the veggies are tender and the beans are heated through. The sauce will thicken slightly as it cools.
  3. Serve hot over white rice. Garnish with chopped parsley, if desired.

  • Serve over cooked white rice or alongside collard greens.
  • Add some chili flakes for a spicy kick.
  • You can swap the black-eyed peas for your bean of choice.
