  • 1 can (14 oz) black-eyed peas, rinsed and drained
  • 2 tablespoons unsalted butter
  • ¼ cup (60g) bacon or ham steak, diced
  • ¼ cup (30g) yellow onion, diced
  • ¼ cup (30g) green bell pepper, diced
  • ½ celery stalk, finely chopped
  • 2 garlic cloves, finely chopped
  • ½ tablespoon Cajun seasoning
  • ¼ cup (60 ml) chicken stock
  • ¼ teaspoon black pepper
  • ½ teaspoons kosher salt
  • Cooked white rice, for serving (optional)
