Ingredients
- 1 can (14 oz) black-eyed peas, rinsed and drained
- 2 tablespoons unsalted butter
- ¼ cup (60g) bacon or ham steak, diced
- ¼ cup (30g) yellow onion, diced
- ¼ cup (30g) green bell pepper, diced
- ½ celery stalk, finely chopped
- 2 garlic cloves, finely chopped
- ½ tablespoon Cajun seasoning
- ¼ cup (60 ml) chicken stock
- ¼ teaspoon black pepper
- ½ teaspoons kosher salt
- Cooked white rice, for serving (optional)
- Chopped fresh parsley, for garnish (optional)
Preparation
- Add all the ingredients to Anyday dish and stir to combine. Cover with lid (knob lifted).
- Cook in the microwave 6 minutes, or until the veggies are tender and the beans are heated through. The sauce will thicken slightly as it cools.
- Serve hot over white rice. Garnish with chopped parsley, if desired.
