To find your microwave’s wattage, look at the front panel, the side of the door, in the back, in the user manual, or Google the model number. If both an input and output wattage are listed, use the output.

Wattage translates to how powerful the microwave is. The higher the wattage, the faster your food will cook. The lower the wattage, the longer the cook time.

When in doubt, start with less time — you can always add more.

Dish

The Medium Deep Dish

Ingredients

  • 4 oz (115g) rotisserie chicken bones
  • 2 cups (500ml) chicken or beef stock
  • ¼ cup (30g) thinly sliced carrot
  • ¼ cup (30g) thinly sliced celery
  • ¼ cup (30g) diced yellow onion
  • 1 garlic clove, peeled
  • ½ bay leaf
  • ¼ teaspoon whole peppercorns
  • ¼ teaspoon salt
  • 1 tablespoon collagen powder (optional)

Preparation

  1. Combine all ingredients in a Deep Dish and cook uncovered in the microwave for 8-9 minutes.
  2. Use a fine-mesh sieve or a spoon to skim the top of the liquid, discarding any foam or other impurities that may float to the top. Cover with the lid (knob lifted) and continue cooking for 6 minutes.
  3. If needed, skim the top of the stock again. Using the Anyday Strainer, carefully strain the stock into a clean container, separating  the bones and veggies from the broth. Discard the solids.
  4. Use the stock right away or allow it to cool to room temperature. Keep the broth in the fridge for up to 5 days, or in the freezer for up to 4 months.

Suggestions

  • For beef broth: Use  roasted beef bones such as oxtail, T-bone steak, etc. For extra richness, add some collagen powder or a bit of chicken skin to create a gelatinous texture.
  • For turkey broth: Use leftover roasted turkey bones. For extra richness, add some collagen powder or a bit of turkey skin to create a gelatinous texture.
  • Add an Asian twist: For a savory, flavor-packed broth, mix in grated ginger, soy sauce, and a drizzle of sesame oil for a unique, aromatic base.

Recipe Notes

  • Skimming the broth helps to create a clearer, cleaner broth in both flavor and texture, so we highly recommend it for the best results.
  • To make frozen bone broth cubes, transfer the cold, strained bone broth into the 2-Tablespoon Anytime Freezer Trays and freeze for up to 3 months.
  • Use caution while transferring hot liquid from the microwave and be sure to set the hot dish on a trivet or hot pad.
  • Microwave ovens vary, even with the same wattages. Adjust cooking times as needed.

Add collagen to boost your bone broth

Collagen is what gives bone broth its rich, velvety texture and deeply nourishing quality. While cooking bone broth in the microwave is quick and easy, it doesn’t extract quite as much collagen from the bones as a long simmer would. Adding collagen powder is the perfect shortcut to get all the benefits: a protein boost, support for healthy skin and joints, and a broth that’s even more satisfying and flavorful.

All You Need to Know About Making Bone Broth in the Microwave

What is bone broth?

Bone broth is a nutrient-rich, flavorful liquid made by simmering animal bones with water, herbs, and vegetables. It’s prized for its depth of flavor and health benefits, such as providing collagen and essential minerals. In this recipe, we use rotisserie chicken bones for convenience and extra flavor, but it can be customized with other roasted bones (like beef or turkey) for variety.

Can I make bone broth in the microwave?

Yes! Using an Anyday dish, you can quickly and easily prepare bone broth in the microwave. This method saves time while still extracting the rich flavor and nutrients from the bones.

Why cook bone broth in the microwave uncovered?

Cooking bone broth in the microwave uncovered allows the liquid to reduce, which helps concentrate its flavors. This reduction process intensifies the broth’s richness, making it more flavorful and satisfying. While the microwave’s efficiency speeds up the cooking process, keeping the dish uncovered ensures the broth achieves the deep, savory taste you’d expect from a long, slow simmer.

Can I substitute rotisserie chicken bones with other types of bones?

Absolutely! You can use roasted turkey bones for a richer flavor or roasted beef bones for a heartier broth. The method remains the same, but cooking times may vary slightly based on the bone type and size.

Can I add collagen to bone broth?

Yes! Adding powdered collagen is an easy way to boost the nutritional value of your bone broth. Simply stir in 1-2 tablespoons of collagen powder after cooking, while the broth is still warm, to ensure it dissolves evenly.

How do I store leftover bone broth?

Allow the broth to cool completely, then pour it into an Anyday dish or portion it into Anytime Freezer Trays. Cover and refrigerate for up to 4 days or freeze for up to 3 months.

What’s the best way to reheat bone broth?

To reheat from the fridge, pour the broth into an Anyday dish, cover with the lid, and microwave on full power for 1-2 minutes. If reheating from frozen, place the frozen portion in an Anyday dish and microwave on full power for 3-4 minutes, stirring halfway through.

Can I customize the flavor of bone broth?

Absolutely! Add aromatics like garlic, onion, or fresh herbs to enhance the flavor. A splash of apple cider vinegar helps extract minerals from the bones, while spices like turmeric or ginger can add a warming kick.
