The Medium Shallow Dish

Ingredients

  • ½ (60g) red bell pepper, thinly sliced
  • ½ (60g) yellow bell pepper, thinly sliced
  • 1 jalapeño pepper, thinly sliced
  • ¼ (30g) medium red onion, thinly sliced
  • 1 clove garlic, chopped
  • 1 cup (150g) cherry tomatoes, halved
  • 2 tablespoons olive oil
  • 2 6-ounce (170g) (or one 12-ounce) salmon fillets
  • paprika, to taste 
  • salt, to taste
  • black pepper, to taste

Preparation

  1. Add the peppers, onion, garlic, tomatoes, olive oil, and salt into the Anyday dish and mix to combine. Cover with the lid (knob lifted).
  2. Cook in the microwave for 4-5 minutes, or until the vegetables are tender and the tomatoes are slightly cooked.
  3. Season the salmon with salt and pepper. Dredge one side with paprika and place it on top of the cooked peppers.
  4. Cover and cook for 6-7 minutes, checking for doneness by piercing the center with a fork. The salmon should flake easily. Spoon the vegetables on top and serve.

Yes, you can substitute salmon with other fish like cod, halibut, or mahi-mahi. You may need to reduce the cooking time by 1-2 minutes depending on how thick the fish is since thinner white fish tends to cook faster than thicker cuts of salmon.

Can I use frozen salmon fillets for this recipe?

Yes, you can use frozen salmon fillets and you won’t even need to thaw the fish! Just follow the recipe as written and add 1-2 more minutes of cooking time if the fish is not done cooking. The cooking times may also depend on the thickness of the fish, the thicker the portion, the more time you will need to add. For cooking frozen salmon filets on their own, follow the directions in this recipe.

Can I prepare the peppers and tomatoes in advance?

Yes, you can prepare the peppers and tomatoes in advance and store them in an Anyday dish with the lid on in the refrigerator for up to 3 days. When ready to cook, simply combine them with the salmon in the Anyday dish.

How do I know when the salmon is fully cooked?

The salmon is fully cooked when it turns pale pink and flakes easily with a fork. If needed, ensure that the internal temperature reaches 145°F (63°C) when using a kitchen thermometer.
