To find your microwave’s wattage, look at the front panel, the side of the door, in the back, in the user manual, or Google the model number. If both an input and output wattage are listed, use the output.

Wattage translates to how powerful the microwave is. The higher the wattage, the faster your food will cook. The lower the wattage, the longer the cook time.

When in doubt, start with less time — you can always add more.

The Large Deep Dish

Ingredients

  • 1 cup white rice, rinsed and drained
  • 2 cups water

Preparation

  1. Place the rice in an Anyday dish and rinse thoroughly under cold tap water, swirling the rice around gently until the water becomes cloudy. Using the Anyday Strainer, strain the excess water. Repeat this process until the water runs clear.
  2. After straining, add the water and stir to combine.
  3. Cook in the microwave uncovered at full power for 12-13 minutes, or until the water is mostly absorbed by the rice. The edges of the dish will start to dry, though the rice will still look very wet. If you still see a layer of water on top, continue microwaving in 1-minute increments until the water is mostly absorbed.
  4. Cover with the lid (knob lifted) and continue cooking at full power for another 3-4 minutes. Gently move the rice with a fork — it should feel loose and tender.
  5. Rest for 5 minutes with the lid on to allow rice to gently finish steaming. Fluff rice before serving.

Serving suggestions & tips

  • Garlic butter: Stir in melted garlic butter and a sprinkle of parsley for a rich, savory side.
  • Herb and lemon: Add freshly chopped herbs like cilantro or parsley and a squeeze of lemon juice for a light, zesty flavor.
  • Vegetable mix: Toss the cooked rice with vegetables like peas, carrots, and broccoli for a simple, colorful side dish.
  • Soy and sesame: Drizzle with soy sauce and top with toasted sesame seeds and sliced green onions for an easy, umami-packed side.

Recipe notes

  • Always use an Anyday Large Deep Dish to cook rice with this method. Do not cook more than 1 cup of rice.
  • Rinsing the rice is important to achieve tender, fluffy rice. Do not skip this step!
  • Microwave ovens vary, even with the same wattages. Adjust cooking times as needed.

All You Need to Know About Making Chef David Chang’s Speedy Rice in the Microwave

How does Chef David Chang cook rice so quickly?

Chef David Chang’s method for cooking rice is a quick and easy microwave recipe that cooks 1 cup of white rice in under 20 minutes. This method uses an Anyday Large Deep Dish to ensure the rice cooks evenly and quickly, offering a fast alternative to traditional rice cooking methods.

Can I cook more than 1 cup of rice using this method?

No, this specific recipe is designed to cook 1 cup of rice in the Anyday Large Deep Dish. If you need to cook more rice, we recommend using our How to Cook White Rice recipe, which is ideal for larger quantities.

Why do I need to rinse the rice? How many times should I rinse it?

Rinsing rice is essential to remove excess starch, which can cause the grains to become sticky and clump together during cooking. Thoroughly rinsing the rice helps it cook up light and fluffy, with each grain staying perfectly separate. Use the Anyday Strainer to make the process quick and easy. Using an Anyday Strainer, rinse and drain the rice repeatedly until the water runs clear—this usually takes about 3 to 4 rinses. Properly rinsing the rice also improves its texture and overall quality in the finished dish.

Why is it important to rest the rice after cooking?

Allowing the rice to rest for 5 minutes after cooking is crucial to ensure the rice finishes steaming and reaches the perfect texture. This resting period helps the rice grains absorb any remaining moisture, making the rice tender and fluffy.

Do I need to cover the rice while cooking?

No, the rice should be cooked uncovered during the first part of the cooking process to allow the water to absorb faster. Once most of the water has been absorbed, cover the dish with the Anyday lid (knob lifted) for the final few minutes of cooking to steam the rice and finish the process.

Can I use this method for other types of rice?

This recipe is specifically designed to cook white rice in a hurry. If you're looking to cook different types of rice, such as brown rice or white rice, for perfect results. Discover more rice recipes by exploring our collection here!

How do I store and reheat leftover rice?

Can I freeze cooked rice?

Yes, you can freeze cooked rice. Use the silicone 1/2 cup Anytime Freezer Trays to portion the rice before freezing for up to 3 months. When you're ready to eat, reheat the frozen rice in the microwave by adding a few drops of water and microwaving for 1-2 minutes per portion until heated through.
