Instant ramen is a microwave must, so naturally we put our own Anyday spin on it. Transform a package of instant noodles by adding in different proteins, veggies, sauces, garnishes (and even a slice of melted American cheese!).

All of Anyday’s recipes are tested (and retested!) in many different microwave and home kitchens to make sure they work—, and work well. Unless specified otherwise, all recipes should be cooked at full power.

Wattage translates to how powerful the microwave is. The higher the wattage, the faster your food will cook. The lower the wattage, the longer the cook time.

Ingredients

For the ramen

  • 2 cups (480ml) water (or chicken or vegetable stock)
  • seasoning packet
  • 1 pack of instant ramen (100g of noodles)

Option #1 add-ins

  • 1 slice American cheese, for topping
  • ¼ cup (40g) cooked pork 
  • 1 scallion, thinly sliced, for garnishing
  • 1 soft boiled egg, for topping

Option #2 add-ins

  • ½ teaspoon lemongrass, finely chopped
  • 1 bok choy, thinly sliced
  • ½ cup (30g) mushrooms, thinly sliced
  • ¼ cup (30g) Chinese sausage
  • chili crisp, to taste 

Option #3 add-ins

  • ½ teaspoon ginger, grated
  • ½ cup (10g) spinach
  • ½ cup (40g) cooked chicken, diced 
  • ½ teaspoon sesame oil

Option #4 add-ins

  • ½ cup (125g) silken tofu, diced 
  • ½ teaspoon sambal oelek 
  • ½ teaspoon ginger, grated
  • ½ scallion, thinly sliced, for garnishing

Option #5 add-ins

  • ½ tablespoon Hondashi powder
  • 4 shrimp, peeled, cleaned, and cut into small pieces
  • 1 teaspoon furikake, for garnishing

Preparation

  1. Place ramen ingredients and your choice of add-ins in the Anyday dish (except for the garnishes listed). Cook uncovered for 4-5 minutes, or until noodles have softened.
  2. Top with garnishes and serve immediately.

Serving suggestions & tips

  • Add fresh herbs for brightness and flavor.
  • Try poaching an egg directly into the ramen while cooking.
  • Top with crispy onions or shallots for added crunch.
