Vibrantly colored and true to their name, sweet potatoes are nature’s candy. Their natural sweetness is complemented with a deeply nutty and umami miso tahini sauce. Sesame adds a bit of crunch to this simple side dish, snack, or on-the-go meal.

Ingredients
- 1 (340g) medium sweet potatoes, skin on
- 2 tablespoons unsalted butter, room temperature
- 1 teaspoon miso paste
- 2 teaspoons tahini
- sesame seeds, optional
Preparation
- Prick sweet potatoes all over with a fork, and place them in the Anyday dish. If too thick, cut it in half lengthwise (like a baked potato). Cover with the lid (knob lifted).
- Cook in the microwave for 6-7 minutes, until the sweet potatoes are tender when pierced with a fork.
- In a separate bowl, mix the butter, miso, and tahini until well incorporated. It’s easiest to do this when the butter is very soft at room temperature!
- Remove the sweet potatoes, cut partially in half lengthwise, and add a spoonful of miso tahini butter in the center. Garnish with sesame seeds and serve.
Serving suggestions & tips
- Use yellow Japanese yams for a fluffier, candy-sweet variation.
- Try substituting tahini with cashew butter.
- Top with chili crisp, scallions, or fresh herbs.
Recipe notes
- Save time: make the miso and tahini butter ahead of time and even freeze in the 2 Tbsp Anytime Freezer Trays and use when needed.
- Microwave ovens vary, even with the same wattages. Adjust cooking times as needed.
