Ingredients

  • cups (400g) canned whole peeled tomatoes
  • ¾ cup(178ml) water
  • ¼ cup (60ml) extra virgin olive oil
  • ½ teaspoon onion powder
  • ¼ teaspoon garlic powder
  • ¼ teaspoon black pepper or red pepper flakes
  • ½ teaspoon dried oregano
  • ¼ teaspoon brown sugar (optional)
  • salt, to taste
  • 1 slice (35g) white bread, crusts removed and torn into rough ½” cubes

Preparation

  1. Add all ingredients to an Anyday dish and stir to combine. Cover with the lid (knob lifted).
  2. Cook in the microwave for  10 minutes, or until soup is bubbling hot and slightly thickened.
  3. Using a blender or immersion blender, puree all ingredients together until smooth. Season with salt and pepper to taste.

  • Herb garnish: Sprinkle freshly chopped parsley, basil, or chives over the soup for a burst of fresh flavor.
  • Tomato and “roasted” garlic: Stir in some quick garlic confit to enhance the soup's savory depth.
